Ingredients
2 tbsp olive oil
 
2 tbsp lemon juice
 
1 tbsp Worcestershire sauce
 
2 tsp Windsor® Nature's Seasons® Seasoning Blend
 
1 tsp dijon-style mustard
 
4 quarters chicken (remove skin if desired)
 
2 potatoes (pared, sliced)
 
3 carrots (julienne cut)
 
1 lemon (fresh)
 

 
Preparation
  1. In a large bowl, combine olive oil, lemon juice, Worcestershire sauce, Windsor® Nature’s Seasons® Seasoning Blend and mustard; add chicken.
  2. Layer potatoes and carrots in a 13 x 9-inch pan.
  3. Remove chicken from marinade and place on potato/carrot slices.
  4. Pour reserved marinade over chicken.
Cooking
  1. Bake at 350°F (175†C) for 50 to 60 minutes.
  2. Remove from oven and squeeze with fresh lemon.
