Ingredients
6 oz good quality bittersweet chocolate (chopped)
 
1 cup granulated sugar
 
1/2 cup corn syrup
 
1 cup toasted whole almonds (coarsely chopped)
 
1 tbsp butter
 
2 tsp Windsor® Kosher Salt (divided)
 
1 tsp vanilla extract
 
1.5 tsp baking soda
 

 

Preparation
  1. Place chocolate in a bowl set over very hot water. Stir often, until melted.
  2. Meanwhile, place sugar and corn syrup in a large pyrex measuring cup or bowl; mix well.
  3. Microwave on HIGH for 4 minutes. Stir in almonds.
  4. Microwave on HIGH for an additional 4 minutes. Stir in butter, half of Windsor® Kosher Salt, and vanilla.
  5. Microwave on HIGH 1 minute. Add baking soda, stir and quickly pour mixture onto parchment paper-lined baking sheet.
  6. Spread out using lightly greased metal spatula.
  7. Let cool 5 minutes; pour melted chocolate over top, spreading to coat.
  8. Cool slightly before sprinkling with remaining salt.
  9. Cool completely and refrigerate; break up into pieces.

Servings: Makes approx. 14 pieces

Note: For easy cleaning, soak the bowl and utensils in boiling water for a few minutes.
Recipe tested in a microwave oven at 850 watts.
