Ingredients
2 cups cherry tomatoes or grape tomatoes
 
1/2 cup vodka
 
1/2 tsp red pepper flakes
 
1 strip lemon rind
 
3 tbsp Windsor® Half Salt™ or Windsor® Table Salt
 
1 tbsp Windsor® Black Peppercorns (freshly ground)
 

 

Preparation
  1. Using a wooden pick or skewer, pierce each tomato 6 times; place in single layer in a shallow bowl. Add vodka, red pepper flakes and lemon rind.
  2. Let stand, covered, for at least 4 hours or overnight. Occasionally, gently stir.
  3. In a small bowl, stir together salt and freshly ground Windsor® Black Peppercorns.
  4. Discard lemon rind. Drain tomatoes; serve with seasoned salt for dipping.

Servings: Makes 2 cups (500 mL)
Note: If desired, serve tomatoes in shot glasses, adding some of the vodka to each glass.
