Brined Cornish Game Hens with Lime Ginger Glaze

Rock Cornish game hens
(about 1-1/2 lbs (750 g) each)
red pepper flakes
Place game hens in plastic bag. Add mixture of salt, sugar and water. Seal bag and refrigerate about 1 hour.
Drain hens and rinse well with cold water. Pat dry and place on rack on baking sheet.
Combine remaining ingredients to make glaze, brush over hens.
Bake at 375F (190C) about 45 minutes, brushing with glaze every 15 minutes, until juices run clear.
Brining ensures moist, succulent poultry.
