Strata is a wonderful dish consisting of bread that’s baked with eggs, cream and cheese. It’s like a savoury version of bread pudding! It’s also versatile: concoct it with your favourite seasonal veggies or cheese. Strata should be made the night before the brunch, leaving extra time to sleep in.

Ingredients

Mushroom and Strata

  • 3 tbsp olive oil
  • 2 cups cremini mushrooms sliced
  • 10 eggs
  • 3 cups half and half cream
  • 1 1/2 cup grated cheese (cheddar, mozzarella or other)
  • 2 tsp Windsor® Fine Sea Salt
  • 1 tsp Windsor® Black Peppercorns freshly ground
  • 1 loaf crusty bread (about 450 g / 1 lb), cut into cubes
  • 1 pint cherry tomatoes

  • 1 loaf crusty bread (about 450 g / 1 lb), cut into cubes
  • 1 pint cherry tomatoes

Recipe Preparation

For Mushroom and Strata

  1. Warm a large skillet over medium heat. Add the olive oil and sauté the cremini mushrooms until golden brown, stirring, for 8 to 10 minutes.
  2. In a large bowl, whisk the eggs. Add the half-and-half, cheese, salt and pepper and whisk to combine.
  3. Layer a casserole with the cubed bread, sautéed mushrooms and cherry tomatoes.
  4. Pour the egg mixture directly over the bread. Cover with plastic wrap and refrigerate for 12 hours or overnight.
  5. After 12 hours or the next day, preheat the oven to 350 °F (180 °C).
  6. Unwrap the strata and bake in the oven for 40 to 50 minutes. The strata is ready when it’s golden brown on top and set on the bottom.
  7. Cool for at least 10 minutes before serving.
  8. Tip: Stale bread is perfect for strata. You can also toast the bread cubes if using fresh.
