Instructions
  1. Preheat oven to 425º.
  2. Peel and half heirloom carrots and arrange on a lined baking sheet.
  3. In a bowl, mix melted butter, Windsor® Coarse Sea Salt, fresh ground pepper and thyme. Pour butter mixture over heirloom carrots.
  4. Roast at 425º for approximately 30 minutes.
  5. Serve with a touch of lemon zest, thyme and crumbled goat cheese.
  6. For added crunch, garnish with a little extra Windsor® Coarse Sea Salt.
