Instructions
  1. Preheat the oven to 225 ºF (105 ºC).
  2. Season the pork loin on all sides with coarse sea salt, black pepper, fennel powder and cinnamon.
  3. Wrap the pork loin in aluminum foil and place into a shallow baking dish.
  4. Roast the pork loin in the oven for 1 hour 30 minutes to 2 hours, or until internal temperature reaches 145 ºF (65 ºC).
  5. Remove the pork from the oven, unwrap foil and reserve the cooking juices in a pan.
  6. Increase the oven temperature to 325 ºF (160 ºC). Place the pork back in the pan without foil and roast for 45 minutes to 1 hour or until the pork turns golden on the outside.
  7. Heat the pan with the reserved juices over medium-low heat. Add miso, yellow mustard, honey and turmeric and whisk until incorporated.
  8. After the pork has rested for 5 to 10 minute., slice and finish with honey-miso sauce and a pinch of coarse sea salt.

Tips for success:
Be sure to season the pork well and evenly on all sides with coarse sea salt and spices to enhance the flavours. Then, wrap it up in aluminum foil to trap all those delicious juices during cooking. Finish the sauce with honey and miso to give the prime rib a sweet and salty flavour that’s out of this world. Don’t forget to season with coarse sea salt after slicing the meat, which adds texture and a final pop of salty goodness. Dinner is served!
