Instructions
  1. In an electric blender, combine all ingredients except oil and vinegar.
  2. Cover and blend until almost smooth.
  3. Stir in oil and vinegar. Chill well.
  4. Cover and refrigerate at least 2 hours or overnight.
  5. Serve in bowls and, if desired, garnish with croutons, diced tomato and cucumber.
