Ingredients

Crostini

  • 1/2 baguette
  • 2 tbsp olive oil
  • 1 cup soft goat cheese (log)
  • 1 tbsp fresh rosemary (minced)
  • 1 tbsp fresh thyme leaves (minced)
  • 1 tbsp italian parsley (minced)
  • 1/3 cup roasted red pepper (diced)
  • optional olive oil (for drizzling)
  • For garnish Windsor® Black Peppercorns (freshly ground)

Crostini

  • 1/2 baguette
  • 2 tbsp olive oil

Recipe Preparation

Crostini

  1. Heat broiler in oven.
  2. Cut baguette into 1/2-inch (2 cm) thick slices.
  3. Brush both sides of each slice lightly with olive oil and place on baking sheet.
  4. Place under broiler, about 1 minute on each side, or until lightly golden. Remove from oven; set aside.
  5. Combine goat cheese with herbs in a medium bowl.
  6. Spread 1 tbsp (15 mL) cheese mixture onto each baguette slice.
  7. Top with 1 tsp (5 mL) roasted red pepper. If desired, drizzle with additional olive oil.
  8. Finish with freshly ground Windsor® Black Peppercorns, to taste.

Tip: To make ahead, prepare baguette slices and store in air-tight container. Prepare goat cheese mixture and keep in refrigerator. Just before serving, assemble crostinis and arrange on a platter or tray.
