- Heirloom carrots
- Butter (melted)
- Thyme
- Lemon zest
- Soft goat cheese (crumbled)
- Windsor® Coarse Sea Salt
- Black peppercorns (freshly ground)

Recipe Preparation
Heirloom Carrots
- Preheat oven to 425º.
- Peel and half heirloom carrots and arrange on a lined baking sheet.
- In a bowl, mix melted butter, Windsor® Coarse Sea Salt, fresh ground pepper and thyme. Pour butter mixture over heirloom carrots.
- Roast at 425º for approximately 30 minutes.
- Serve with a touch of lemon zest, thyme and crumbled goat cheese.
- For added crunch, garnish with a little extra Windsor® Coarse Sea Salt.
