Ingredients

  • 1.10 lb orange roughy (fillets – 4 125 g fillets)
  • 2 tbsp olive oil (or vegetable oil)
  • 2 tsp Windsor® Nature’s Seasons® Seasoning Blend
  • 1/4 cup salsa (divided)
  • 0.28 lb feta cheese (crumbled)
  • 0.66 lb baby spinach leaves (prewashed – remove stems and coarsely chop)

Recipe Preparation

For the Orange Roughy

  1. Brush fish fillets with oil; sprinkle all sides with Windsor® Nature’s Seasons® Seasoning Blend.
  2. Cover and refrigerate for 30 minutes. Spoon 60 mL (1/4 cup) Salsa over each fillet.
  3. Bake at 350°F (175°C) for 20 minutes or until fish flakes easily when tested with a fork; sprinkle with feta.
  4. Return to oven for an additional 5 minutes to heat and soften cheese.
  5. Serve fish over spinach with additional salsa. Serve immediately.
