Ingredients

Spice Rub

  • 1 tsp Windsor® Black Peppercorns (freshly ground)
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground allspice
  • 2 tsp ground cumin
  • 1 tsp ground cardamom
  • 1 tsp ground nutmeg
  • 1 tbsp Windsor® Kosher Salt

For beef and lamb

  • 2 tbsp of olive oil

Spice Rub

  • 1 tsp Windsor® Black Peppercorns (freshly ground)
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground allspice
  • 2 tsp ground cumin
  • 1 tsp ground cardamom
  • 1 tsp ground nutmeg
  • 1 tbsp Windsor® Kosher Salt

For beef and lamb

  • 2 tbsp of olive oil

Recipe Preparation

For Spices

  1. Mix all spices in a bowl.

For Beef & Lamb:

  1. Brush meat with olive oil, then rub the spice mixture on the meat and let sit for 30 minutes.
  2. Grill to desired doneness.

Chicken

  1. Toss chicken drumsticks in the spice mixture and refrigerate for 30 minutes to one hour before baking.
  2. Place on a lined baking sheet and bake in oven at 400°F (200°C) for 40 to 45 minutes, turning after 20 minutes.
  3. You can also grill on the barbecue, turning frequently until done.
