Ingredients

  • 3 tbsp brown sugar
  • 3 tbsp Windsor® Kosher Salt or Windsor® Coarse Sea Salt
  • 1 tbsp chili powder
  • 1 tbsp paprika
  • 1/2 tsp dry mustard powder
  • optional red chili flakes (to taste)

Recipe Preparation

For the Sweet and Salty Spice Rub

  1. Mix all ingredients together in a bowl.

For the Chicken

  1. Toss chicken drumsticks in the spices and refrigerate for 30 minutes to one hour before cooking.
  2. Place on a lined baking sheet and bake in oven at 400°F (200°C) for 40 to 45 minutes, turning after 20 minutes.
  3. You can also grill on the barbecue, turning frequently until done.

For the Beef & Lamb

  1. Brush meat with olive oil, then rub the spice mixture on the meat and let sit for half an hour.
  2. Grill to desired doneness.
